Russians and Potato Breakfast Hash

INGREDIENTS

  • 1kg Baby Potatoes, Quartered & Boiled
  • 100ml Cooking Oil
  • 1/2 Onion, Chopped
  • 1 Garlic Clove
  • 1/2 Green Pepper,
  • Chopped
  • 450g (5) Thompsons Selection
  • Russians, Cubed
  • 1 tsp Smoked Paprika
  • 45g Fresh Coriander, chopped

METHOD

  1. In a large pan sauté Onions together with Thompson’s Selection Russians, as Russians start to cook add boiled Potatoes and smoked Paprika continuously stirring to coat evenly.
  2. Once cooked and both Russian & Potatoes skin is slightly crispy toss in Garlic and Green Peppers.
  3. Top with an Egg cooked to your liking and garnish with fresh Coriander.

 

Chef’s Tip: Do not skin Potatoes as they are a source of Fiber
