CHICKEN POLONY SAVOURY FLAP JACKS

 

INGREDIENTS

  • 250ml Cooking Oil
  • 4 Slices Thompsons Selection Chicken Polony, into bite size chunks
  • 1/2 Cup Sweet Corn
  • 2 Large Eggs, Whisked
  • 1/2 Cup Cheddar Cheese
  • 1/2 Cup Self raising Flour
  • 2 Tbsp Chives, Chopped
  • 1/2 Tsp Salt & Pepper
  • 1 Cup, Milk

METHOD

  1. Sauté Sweetcorn & Chives, set asid.
  2. Cut Thompsons Selection Polony into bite size chuncks.
  3. In a bowl combine all the ingredients, excluding the eggs & milk
  4. Once well combined fold in eggs, and slowly add milk for a batter consistency.
  5. Heat pan over medium-heat and lightly fry Flap Jacks until golden on each side.

 

Chef’s Tip: For a Smokey flavour Thompsons Selection Russian can be used.
