Saucy Meatball Sub

 

 

INGREDIENTS

  • 2 Baguette Loaves
  • 6 Thompsons Selection Beef Burgers, quartered & shape into Meatballs
  • 150 ml Cooking Oil
  • 1 Onion, finely chopped
  • 1 Garlic clove,minced
  • 1/2 tsp Tomato paste
  • 1 Tbsp Curry powder
  • 1/2 tsp Paprika
  • 2 (400g) Tinned Tomatoes
  • 1 tsp Sugar
  • 1 Cup Mozzarella Cheese, grated
  • 1/2 Cup Coriander, chopped

METHOD

  1. In a large pan fry Thompsons Selection Burger meatballs for a minute on each side or until they have a crust, place them on a side plate to rest.
  2. Using the same pan sauté Onions until translucent, add in Garlic, Curry powder, Paprika & tomato paste and stir for a minute or two.
  3. Add in Tomatoes & Sugar, stir and allow the sauce to reduce on a low simmer.
  4. Once cooked return the Meatballs in to the sauce, season with Salt & Pepper for taste.
  5. Cut Baguettes in the middle, spoon in the sauce and meatballs inside & top with cheese, place on a baking tray & bake in a preheated oven (180) until Cheese is melted.
  6. Garnish with chopped Coriander.
