
INGREDIENTS
- 1 Tbsp Cooking Oil
- 1 Medium Onion, Chopped
- 1/2 Green & Red Peppers, Chopped
- 1/2 tsp Garlic, Minced
- 1 Tbsp Curry Powder
- 1 Tbsp Paprika
- 1 Tsp Tomato Paste
- 4-6 Thompsons Selection Beef Burgers
- 1 Tinned Tomatoes
- 1 Punnet Cherry Tomatoes, Halved
- 1 Packet Pasta, Cooked per pack instructions
- 1/2 Cup Ricotta Cheese
- 1 Bunch Thyme
Method
- Sauté Onions until they are soft, once soften add garlic, curry powder & paprika, stir in tomato paste and allow to cook for a few minutes.
- Add in Thompsons Selection Beef Burgers, using a fork to mash patties mimicking minced meat. Continue to stir until well combined.
- Stir in chopped tomatoes, reduce heat allowing curry sauce to develop and thicken finishing off
with peppers. - In a baking dish, combine cooked Pasta with curry until it is completely coated, top with
tomatoes, ricotta & thyme. - Bake at 180 for 5 – 8 minutes or until ricotta cheese is melting & bubbling.
