SPICY BURGER SHAKSHUKA

INGREDIENTS

  • 1 Tbsp Cooking Oil
  • 1 Medium Onion, Chopped
  • 1/2 Green & Red Peppers, Chopped
  • 1/2 Tsp Garlic, Minced
  • 1 Tbsp Curry Powder
  • 1 Tbsp Paprika
  • 1 1/2 tsp Chili Flakes
  • 4-6 Thompsons Selection Beef Burgers
  • 1 Tinned Tomatoes
  • 6 Eggs
  • 1 Bunch Coriander, Chopped

Method

  1. In a large pan sauté Onions until they are soft,
    once soften add garlic, chili flakes, curry powder
    and paprika. Allow to cook for a few minutes.
  2. Add in Thompsons Selection Beef Burgers, using
    a fork to mash patties mimicking minced meat.
    Continue to stir until well combined.
  3. Stir in peppers & chopped tomatoes, reduce heat
    allowing curry sauce to develop and slightly
    thicken.
  4. Using the back of your spoon, make an
    indentation and crack eggs, season with salt &
    pepper.
  5. Bake at 180 for 5 minutes until eggs are cooked
    to desired consistency, garnish with fresh
    coriander .
