SPICY BURGER SHAKSHUKA
INGREDIENTS
- 1 Tbsp Cooking Oil
- 1 Medium Onion, Chopped
- 1/2 Green & Red Peppers, Chopped
- 1/2 Tsp Garlic, Minced
- 1 Tbsp Curry Powder
- 1 Tbsp Paprika
- 1 1/2 tsp Chili Flakes
- 4-6 Thompsons Selection Beef Burgers
- 1 Tinned Tomatoes
- 6 Eggs
- 1 Bunch Coriander, Chopped
Method
- In a large pan sauté Onions until they are soft,
- once soften add garlic, chili flakes, curry powder
- and paprika. Allow to cook for a few minutes.
- Add in Thompsons Selection Beef Burgers, using
- a fork to mash patties mimicking minced meat.
- Continue to stir until well combined.
- Stir in peppers & chopped tomatoes, reduce heat
- allowing curry sauce to develop and slightly
- thicken.
- Using the back of your spoon, make an
- indentation and crack eggs, season with salt &
- pepper.
- Bake at 180 for 5 minutes until eggs are cooked
- to desired consistency, garnish with fresh
- coriander .
