SPICY BURGER SHAKSHUKA

INGREDIENTS

  • 1 Tbsp Cooking Oil
  • 1 Medium Onion, Chopped
  • 1/2 Green & Red Peppers, Chopped
  • 1/2 Tsp Garlic, Minced
  • 1 Tbsp Curry Powder
  • 1 Tbsp Paprika
  • 1 1/2 tsp Chili Flakes
  • 4-6 Thompsons Selection Beef Burgers
  • 1 Tinned Tomatoes
  • 6 Eggs
  • 1 Bunch Coriander, Chopped


Method

  1. In a large pan sauté Onions until they are soft,
  2. once soften add garlic, chili flakes, curry powder
  3. and paprika. Allow to cook for a few minutes.
  4. Add in Thompsons Selection Beef Burgers, using
  5. a fork to mash patties mimicking minced meat.
  6. Continue to stir until well combined.
  7. Stir in peppers & chopped tomatoes, reduce heat
  8. allowing curry sauce to develop and slightly
  9. thicken.
  10. Using the back of your spoon, make an
  11. indentation and crack eggs, season with salt &
  12. pepper.
  13. Bake at 180 for 5 minutes until eggs are cooked
  14. to desired consistency, garnish with fresh
  15. coriander .
